STUFFED PEPPERS

These turned out as great as assuming I would have thought they would. Why I’m using a crock pot? I’m currently limited to cookware so crock pot is my only heating tool to use.

I’ve been following http://crockpot365.blogspot.com/ and stumbled upon her stuffed pepper recipe. I didn’t make her recipe but wanted to know how to do this.

INGREDIENTS:

4-6 med green peppers
1 lb ground beef
(1 large egg, beaten)
½ jar spaghetti sauce, divided
1 c seasoned croutons, crushed
(1 t dried onion flakes)
(¼ t pepper, wax paper)
(Grated Parmesan cheese)

My Version:

caeser flavored croutons

onion powder

mozzarella cheese

I didn’t cook the stuffed peppers 6-8 hours. I put them in up to 5 hours prior because I figured the beef was cooked already.

Also, I put about 1/3 cup water at the bottom

So I didn’t burn the peppers.

I’ve made stuffed peppers before but not using this recipe and this recipe was the best!

HOW TO MAKE:

Cook ground beef in skillet; drain. Add 1 large egg and half bottle of spaghetti sauce and crumbled croutons

sprinkle some onion powder if you choose to eat or the orig. recipe onion flakes.

spoon mixture into cut out peppers with membranes removed. Sprinkle a little mozzarella cheese over the top.

Place in crock pot. When cooked, 1 T spaghetti sauce over the top, heat.

ENJOY!!!!

Dinosaur Birthday Party!   Leave a comment

My little guy recently had a First Birthday March 6 -2011 . We celebrated it a a week early since we were moving (we’re Military family) and we wanted a chance for our little friends to come celebrate before we shipped out! I made his nursery theme Dinosaur, as well as his Halloween costume, so why not make his First Birthday Dinosaur too?! I didn’t really do this for my Daughter but I had an obsession with DINOSAUR. Yes, he even has dinosaur infant cap given to me, socks to go with and tops!

Anyway, by inspirational ideas I’m going to share photos from the Birthday! I don’t take credit for the ideas just creation! I incorporated from different sites too.🙂

FOSSIL ICE!

Gotta have something festive & cool in your drinks, right?! Now, I ordered this from Amazon, 3B Scientific Fossil-Iced Silicone Ice Tray, T-Rex

I used Gluten Free all purpose flour. Turned out dry but think I left it in too long. Just regular spaghetti sauce, nothing special!

I actually used a pizza dough recipe to make bread sticks. BAD IDEA!

But, I think you get the idea!🙂

I made Lava Juice but unfortunately didn’t get the picture😦 Basically, it’s just fruit punch!🙂

I had it in a yellow pitcher so it wouldn’t make a good picture!

RICE KRISPY TREATS – Dinosaur!

I bought dinosaur sandwich cutters then colors green into white chocolate melted. It’s not fancy but it did what I wanted!

Just gave it a woody effect to it!

THE CAKE!

Credits go to my husband for actually creating this!

Ingredients: cinnamon apple chunk muffin mix, then used green food coloring in  cream cheese frosting!

I used jelly beans for rocks and teeth!

He used butterscotch for the detail, and chocolate chips as well as Hershey’s drops and maybe some mini Reese’s peanut butter cups!

I used stencils from Google and Power Point to make slides!

I’m cheap as I did have fish line but just used white yarn to hand this with and used my 3 whole paper punch!

I went to Petsmart to buy Aquarium Gravel and stumbled upon this Pine Tree and I was looking for a Pine Tree to go with the theme. So, I said the heck with it and got it!

The Dinosaurs came from Dollar store. Moss as well.

Dinosaur Sensory Bin

Aquarium Gravel – I bought about 4 bags – Styrofoam Balls from Hobby Lobby and brown paint. Dinosaurs from Dollar Store.

The bin you can find anywhere like this but I bought one from a prior play date using rice from Walmart and has a lid to it. It has wheels so it’s easy to maneuver with.

Also, the moss from Dollar store incorporated to get the whole dinosaur feel!

I didn’t put them in anything fancy — just used my sons’ Easter basket.

Zuchini Muffins – Breakfast on the go!   Leave a comment

I wanted to make easy on-the-go breakfast since my family was moving. So, I stumbled upon this recipe and they turned out delicious! We had these two days in-a-row. Makes for nice breakfast in the hotel room!

ZUCCHINI MUFFINS

Ingredients:

  • 3 cups grated fresh zucchini
  • 2/3 cup melted unsalted butter
  • 1 1/3 cup sugar
  • 2 eggs, beaten
  • 2 teaspoons vanilla
  • 2 teaspoons baking soda
  • Pinch salt
  • 3 cups all-purpose flour
  • 2 teaspoons cinnamon
  • 1/2 teaspoon nutmeg
  • 1 cup walnuts (optional) – I didn’t use this
  • 1 cup raisins or dried cranberries (optional) – I didn’t use this

1 Preheat the oven to 350°F (175°C). In a large bowl combine the sugar, eggs, and vanilla. Stir in the grated zucchini and then the melted butter. In a separate bowl, mix together the flour, baking soda, nutmeg, and cinnamon. Stir these dry ingredients into the zucchini mixture. Stir in walnuts, raisins or cranberries if using.

2 Coat each muffin cup in your muffin pan with a little butter or vegetable oil spray. Use a spoon to distribute the muffin dough equally among the cups, filling the cups up completely. Bake on the middle rack until muffins are golden brown, and the top of the muffins bounce back when you press on them, about 25 to 30 minutes. Test with a long toothpick or a thin bamboo skewer to make sure the center of the muffins are done. Set on wire rack to cool for 5 minutes. Remove muffins from the tin let cool another 20 minutes.

Note, if you are including walnuts and dried fruit, you will likely have more batter than is needed for 12 muffins. I got about 14 muffins from this batch, and that included filling the muffin cups up as far as they could possibly go (above the surface of the muffin tin).

Fiesta Pasta Casserole (in a crock pot!)   Leave a comment

Since my family is currently TDY (Temporary stationed at Fort Benning) in a hotel I have very little cooking space. More like limited as to how I can make dinners! It’s a good thing I kept the crock pot BECAUSE we have no oven and a small stove! No, I don’t make a lot of crock pot meals nor have I ever thought about casseroles in the crock pot but I just came up with the solution myself this AM and researched it. Little did I know that it IS possible & there is in fact recipes out there. You learn something new everyday!

 

Well, I had never had this recipe before and thought it was different a something turned out yum to share!

FIESTA PASTA CASSEROLE in a crock pot!

Ingredients:

8oz ziti pasta (3 cups cooked)

6 slices bacon (if you want healthier choose turkey bacon)

2 cans fiesta nacho cheese soup

(2/3 c milk)

1/4 t pepper

10 oz sliced ham or smoked turkey, chopped

1 tomato, thinly sliced

(my version turned out different. I chopped up tomato & crumbled the bacon)

Directions:

Cook pasta according to directions.

In a bowl mix 2 can soup, with 2/3 c milk, add pasta, then ham or turkey.

Perfectly Moist Banana Bread   Leave a comment

I haven’t made Banana bread in a long time but my husband asked to make it because we’re PCSing this week and we needed some easy yummy breakfast!

Ingredients:

2 cups all purpose flour

1 teaspoon baking soda

1/4 teaspoon salt

1/2 C butter

3/4 C brown sugar (I didn’t have enough so I improvised with about 1/4 C caramel syrup? )

2 eggs beaten

2 1/3 Cups mashed overripe bananas

Directions: Preheat oven to 350 F Lightly grease a 9×5 inch loaf pan.

In a large bowl, combine flour, baking soda, and salt. In a separate bowl, cream together butter and brown sugar. Stir in eggs and mashed bananas until well blended. Stir banana mixture into flour mixture; stir just to moisten. Pour batter into prepared loaf pan. Bake in preheated oven for 60 – 65 minutes, until a toothpick can be inserted into center of the load comes out clean.  Let cool in pan for 10 minutes.

St Patty’s Sweet Mix | Party Mix   Leave a comment

ST. PATTY’S SWEET MIX
This is similar to a trail mix only a little different twist to it! Very sweet and delicious though!

In a large microwavable bowl, place cereals, pretzels and peanuts, set aside.

 In 2-cup microwavable measuring cup, microwave brown sugar, butter and corn syrup uncovered on high about 2 minutes, stirring after 1 minute, until melted and smooth. Stir in baking soda until dissolved.

Pour over cereal mixture, stirring until evenly coated.

Microwave uncovered on high 1- 2 minutes stirring and scraping bowl every 30 seconds just until cereal begins to brown. Cool 5 minutes; stir in candies. Spread on waxed paper to cool; break into bite sized pieces. Place in gold foil baking foil cups if desired. Store in air tight container.

Ingredients:
4 C Lucky Charms cereal
2 C Corn Chex cereal
11/2 C broken mini pretzels twists (about 65 twists)
1 C dry roasted peanuts
1/2 c packed brown sugar
1/4 C butter
2 T corn syrup
1/4 t baking soda
1/4 C green mini candy coated milk chocolate candies (I used green m&ms)

Snacks | Party Mix | St. Patty’s Day Golden Dill Pretzels   Leave a comment

GOLDEN DILL PRETZELS

 

I just made this yummy recipe snack for the week of St. Patrick’s Day! 

 

Heat Oven to 300

Break up the Pretzels into chunks. Place in a large bowl. Sprinkle all dry ingredients onto pretzels. Toss.

Drizzle oil and toss until well coated. Spread on a roasting pan. If using the fat pretzels, bake for 1 hour 20 – 30 minutes, tossing occasionally.

For best results, serve warm!
 
 
And, there you go! Yummy, delicious Dill Pretzels!
 
Ingredients:
2 lbs pretzels (the recipe calls for Hanover so that is what I used. You have the option for smaller one but the fat, large ones work the best! Smaller ones reduce the baking time starting at 1 hour Bake 1 hour 30 minutes for large pretzels)
 
1 T dill weed
1 packet dry Ranch dressing mix
1 T garlic salt
1 bottle popcorn oil (I used corn oil)
