Perfectly Moist Banana Bread   Leave a comment


I haven’t made Banana bread in a long time but my husband asked to make it because we’re PCSing this week and we needed some easy yummy breakfast!


2 cups all purpose flour

1 teaspoon baking soda

1/4 teaspoon salt

1/2 C butter

3/4 C brown sugar (I didn’t have enough so I improvised with about 1/4 C caramel syrup? )

2 eggs beaten

2 1/3 Cups mashed overripe bananas

Directions: Preheat oven to 350 F Lightly grease a 9×5 inch loaf pan.

In a large bowl, combine flour, baking soda, and salt. In a separate bowl, cream together butter and brown sugar. Stir in eggs and mashed bananas until well blended. Stir banana mixture into flour mixture; stir just to moisten. Pour batter into prepared loaf pan. Bake in preheated oven for 60 – 65 minutes, until a toothpick can be inserted into center of the load comes out clean.  Let cool in pan for 10 minutes.
